Ingredients
  1. 2 medium Tomatoes, medium dice (about 1 ½ cups)
  2. ½ medium Red Onion, medium dice about ½ cup
  3. 2 tbsp Extra Virgin Olive Oil
  4. 1 tbsp White Vinegar
  5. to taste Sea Salt and Freshly Ground Pepper
  6. 1 tbsp Fresh Basil, chopped or 1 to 2 tsp dried basil (optional)
Instructions
  1. RED ONION AND TOMATO SALAD
  2. Yield: 4 servings
  3. 2 medium Tomatoes, medium dice (about 1 ½ cups)
  4. ½ medium Red Onion, medium dice about ½ cup
  5. 2 tbsp Extra Virgin Olive Oil
  6. 1 tbsp White Vinegar
  7. to taste Salt and Freshly Ground Pepper
  8. 1 tbsp Fresh Basil, chopped or 1 to 2 tsp dried basil (optional)
  9. Mix all ingredients in a bowl, taste and adjust seasonings and refrigerate for at least at least 20 minutes.
  10. Excellent as a side salad with meat, fish or chicken (especially good with barbecued foods).
  11. Salad will last up to 2 days refrigerated, but note that fresh basil may turn brown and seasonings will have to be adjusted, while dried basil will not darken.
Notes
  1. Add: jalapeño and replace basil for cilantro for a 'pico de gallo' style salad
